Barbecue Meat Loaf

Here is an adaptation of a Paula Deen recipe that I tried last night. It came out REALLY good and is very quick and easy to make.

  1. 1 1/2 pounds of ground sirloin
  2. 1 cup of whole wheat bread crumbs
  3. 1 onion diced
  4. 1 egg lightly beaten
  5. 2 8-ounce cans of no-salt added tomato sauce
  6. 3 tablespoons of vinegar
  7. 3 tablespoons of brown sugar
  8. 2 tablespoons of Dijon mustard
  9. 2 tablespoons of Worcestershire sauce
  1. 1. Mix the beef, onion, egg, bread crumbs, 1/2 cup of tomato sauce, and salt and pepper to taste. Make sure you mix it thoroughly so that the bread crumbs are completely absorbed.
  2. 2. Form the mixture into a loaf in a shallow baking pan (I used a Pyrex glass sheet).
  3. 3. Mix the rest of the tomato sauce, vinegar, brown sugar, mustard and Worcestershire sauce.
  4. 4. Pour over the meatloaf.
  5. 5. Bake in an oven preheated to 350-degrees for one hour. Baste the meat with the pan juices every 15 minutes or so.
